There are 3 different types of Gumbo dishes, but there isn't anything different with one another. As a matter of fact the regular Gumbo dish consists of the three different types of gumbo dish, but the gumbo dish has been designed to eliminate one or a few important ingredients turning it into a specific type of Gumbo.
Chicken and Sausage Gumbo
Chicken and sausage Gumbo is the most popular type of Gumbo mainly because chicken and sausage are more available and less expensive than seafood. Andouille sausage is mainly made out of pork and garlic, but this is the type of sausage that is generally used in this type of Gumbo dish. Chicken wise, its usually boneless white or dark meat, this type of chicken is best to use because by using this type of chicken you avoid a greasy flavor.
Seafood Gumbo
Seafood Gumbo is usually made out of shrimp, crab, crawfish, fish, oysters or a combination of these. Seafood gumbo isn't made out of clam juice or water; it is made in a seafood stock from shrimp, crab or fish. To give the seafood gumbo a different flavor it can be thickened with file.
Gumbo Herbs
Gumbo herbs is a type of gumbo dish that is only made with vegetables. The gumbo herb contains a variety of greens-like spinach, collards, mustard, chard, turnips, cabbage, parsley or scallions, in addition to the onions, bell peppers, celery and garlic. This dish has been most popular to eat during good Friday, lent or holy Thursday.
